I'll often move my meal tray to the centre table but if possible, I'll try and leave space for my neighbour to do the same if they want to (rotating the half tray can help). If I do have to take the whole table or middle seat for something, I keep the time as short as possible, then keep things to 'my half'.

Once somebody actually appeared from the back of the plane and suddenly plonked themselves onto the middle seat. I believe that they had a tight connection and had managed to negotiate a better place for themselves with the crew. I was a little annoyed that the extra space had been taken, but as I hadn't paid for the space I couldn't complain.
