My comment in regards to too many restaurants trying to be trendy was more generic than specifically French. I find it to be especially a failing of American hotels but have experienced enough of it elsewhere to feel that it isn't limited to the American continent. That said, France is certainly one place where I have not had difficulty finding good quality mid-priced food, although I have read articles suggesting that the overall quality of Paris restaurants is declining.
