As for your beach, Dec/Jan is the height of high season. So any beach worth going to is likely to be pretty crowded I would imagine. But I'm not much into beaches so I can't recommend much. You might want to consider southern Cambodia though. I spent a few days in Kep several years ago which was interesting. There are some beaches nearby as well as Kampot, Bokor, etc.
There are LCCs that fly out of Bangkok ( make sure which terminal!) to SR. I remember it was a thirty minute flt. Visa on arrival, $25 US currency .....a few years ago.
As to more time, isn't that personal choice based on likes, dislikes, budget, companion etc etc ?
