The connection time at LAX + flight up to San Jose will still take you longer than flying to SFO and getting down to San Jose. And, in case of a delayed flight and missed connection etc -- you'll be wishing that you were relatively close to San Jose at SFO rather than at LAX.
You can always uber or taxi down to San Jose instead of hiring a car (though not necessarily as cost effective) but it is faster.
If you really wanted to fly to San Jose, I'd say LHR-ORD-SJC is a better routing.
