Lunch
For Starters:
Cured salmon trout with mustard crème fraiche and celeriac apple slaw
Heirloom tomato with romaine salad and lemon vinaigrette

Followed By:
Stir-fried scallops with steamed jasmine rice, kalian and carrots
Bone marrow crusted choice beef tenderloin with Bordelaise sauce, Yukon mash potatoes and roasted root vegetables
Poached chicken roulade with black truffle sauce, fingerling potatoes, baby turnips, soy beans and patty pan squash
[V] Saffron fettuccine with wild mushroom sauce, arugula, pine nuts and parmesan cheese

And to Finish:
Cambozola, Cabernet soaked Cheddar and Port Salut crackers, grapes and quince paste
Fresh seasonal fruit
Chocolate with caramel banana
Freshly brewed Illy coffee and a selection of teas

Snacks available upon request:
Black Angus beef burger with aged cheddar cheese served with tomato ketchup
Shui gaw in noodle soup
Haggen-Dazs Ice Cream

Dinner
Fresh seasonal fruit

Followed by:
Chicken with tomato garlic sauce, egg fried rice, kalian and carrots
Port wine braised kurobuta pork cheeks, grain mustard spaetzli, green beans and heirloom carrots
[V] Vegetable and ricotta cheese terrine with creamy pesto

And to finish:
Yuzu crème burlee with mascarpone and orange sauce
Freshly brewed Illy coffee and a selection of teas
