You shouldn't have a problem booking as many rooms as you desire as long as the hotel has availability. You might want to contact the hotel to confirm that it won't be an issue.

If your concern was whether or not Hyatt would frown on this, I think the answer is that they're encouraging Diamonds to gift award nights to friends/family through the Guest of Honor program.
