Given that it'll be an early evening flight I fully expect we will be looking to enjoy some adult beverages so am leaning towards Wingtips solely for the better drink selection. 2 cocktails each would easily cost $50 in the terminal.

Wingtips is great. Not as good as foreign lounges or Centurion, but much much better than Skyclub. Real cooked food - nothing special but you can make a real meal. Self-serve bar. It hasn't ever been crowded when I have gone in there, while Skyclub has generally been packed (but I've always been able to find a seat pretty easily). Showers in Skyclub are more numerous and better - 6 total versus 1 per gender in Wingtips. Skyclub showers are cleaned after every use, but I've used Wingtips showers 3 or 4 times and found them satisfactory each time.
