FWIW, we stayed at Las Cavas in the first year or so it was open in the week prior to the Christmas holiday, and we did LOVE it. I'd say it was Aman-like in its service and amenity levels, and that the owners were extremely hands-on and gracious. At the time, they had a full board plan where you could eat ANYWHERE, on property or off property, and then submit the receipts for off-property dining which they deducted from the rate! (They quickly realized that was unsustainable, but it was quite a stupendous deal for us at the time.)
I don't blame anyone for avoiding high holiday rates, though--as it so often can mean that service is also not quite as top-drawer when at full occupancy, even at some Amans. That wasn't our experience at Las Cavas, but it is always a cautionary tale and concern IMO.
I will say that we definitely plan to return to Las Cavas, but at a non-holiday time of year--barring finding another property in the area that actually delivers the comparable experience for us. For those who do want to try it and can afford it, we did love it.
