I would strongly suggest Zilara Cancun. It's tried and tested and is adults only. Zilara Rose Hall is sold as adults only, however this not enforced. As ridiculous as that may seem. We spent 10-nights at Zilara Cancun and didn't leave the hotel once. Why leave? We've also stayed at Ziva Los Cabos which is an exceptional property and has an amazing adults only pool and swim-up bar. We found most people with kids dined at the buffets and not the table service restaurants. It's kind of ironic that Ziva Los Cabos was more of an adults only experience than Zilara Rose Hall. One big problem though is that Ziva Los Cabos maybe closed through the rest of the year from a brutal hurricane.
