My last family holiday, 2 adults and 2 kids managed with two max sized hand luggage and one "second bag" between us for a 11 day trip (to Denmark/Skane incidentally).

I'd urge you to try without checked baggage. It is so liberating being able to carry your luggage on your back and on the last trip when flooding caused train problems, being able to move quickly from a rail replacement coach to a train to Kastrup made the difference between missing and catching our flight home.

If you are on business and need to look smart, use the hotel laundry. If you are dressing down then you can stuff plenty and pairs of pants and t-shirts into your hand luggage.
