If your fare is ex-DUB, I think that the standard advice is always to book the last sector as LCY-DUB if you want to ensure that you get your bag back at LHR.
Or (possibly): book the last sector to depart LHR the day after you land at LHR. As long as it is within 24 hours, the fare should not change.

I haven't tried this, but I would be quite surprised if an outstatation CI agent said you can't have your hold luggage back for an overnight stopover. For that matter, I'm not sure that airlines are geared up to store your hold luggage overnight during a stopover. Anyone know?
