It's one per person. If you politely ask the server they may accommodate you. I do think that both pancakes AND eggs would constitute two entrees unless you are at a buffet. My wife occasionally asks for some substitution but usually because she wants a little more variety rather than quantity and the server almost always accommodates her request. If, in effect, you want a larger breakfast, you may have to pay for it. The restaurant at the Grand DFW, especially, is very helpful to Diamonds- just ask.
I don't know if it's just a Hyatt and Hilton thing, but these chains never seem to serve pancakes (if they do, it's usually the little ones from a box) at a buffet. You usually have to order them as an entree. At a hotel with a buffet, I will first ask the waiter if the buffet contains any pancakes--usually they will say no, but then they say they can bring some out for me if I'd like. Seeing how pancakes are some of the most popular breakfast items, I don't know why most Hyatts don't serve them in their buffets.
