For a morning transit connecting to a lunchtime flight I would find a decent breakfast place somewhere in Dubai (that isn't an anonymous mall shop), after having a leisurely morning catching up on whatever's going on, then kill an hour or two wandering (mallside or Bur Dubai area) then back to the airport for lounge and spa.
