You can definitely do both in day trips. I think Toledo is kind of magical at night with the walled city, it's gorgeous to watch the sunset from the other side of the valley looking in at the casco antiguo, and it's got a different vibe at night. But you can see high points in a day-trip if spending the night doesn't work.
