How interested are y'all in art? I'd recommend 3 days in Florence and 2 in Rome if you love art. And get the Firenze card if you're there 72 hours (or even fewer).

I don't know the winery so I can't comment. Italy is a place I could stay 6 months and still not visit everywhere I want to go.
