Figured I would check this out looking at March break which is when I would expect flights to be pretty full YYZ-MCO. It seems that it is pretty open in Economy for direct flights - Business is a bit more restricted (many of the flights are 1 or more stop with mixed Bus/Econ) - but all in all there do seem to be plenty of IKK seats available where there are no standard classic reward seats. This query was for 3 pax - Sun 8 Mar to Sun 15 Mar "dates flexible".
Perhaps things have changed since the OP originally tried?
