Which direction you come in from depends on the wind. Generally speaking, in winter aircraft will land/depart from 07L/R and in summer they use 25L/R.
WOW.... very nice presentation.... Based on my usual flight from SFO - HKG(872) & HKG - SFO(870), arriving HKG always approach on either 07L or 07R whereas departure always either on 07L or 07R with very rare occasion passing on top of HK Island.
