Why not just serve tap water? Canada is fortunate to have some of the better tap waters in the world.
Because on most airplanes, the tap water is not fit for drinking.
Though I agree with you on the ground; tap water is the way to go, if you're lucky enough to live in a country like Canada where our tap water is drinkable. I just spent a couple of weeks on vacation in Mexico, and there's nothing like travelling to a country where the tap water can't be consumed to make you appreciate how lucky we are.
