Because my company requires me to buy non-refundable tickets and I frequently have to change my plans. It is still a LOT cheaper. I flew around 150 segments last year and the average difference in price between non-refundable and refundable ticket was $300.
I just wish United would count it toward GS - that probably would have made ad difference for me.
