All but a couple of -800's, ETOPS or not , have the same seat/window alignment as noted below. You were on a plane that did not have the new Recaro seats installed yet.

From sitting in each of the seats:
7A/F Window is centered at your shoulder.
8A/F Window is ideally positioned
9A/F Partial view out of two windows.
10A No windows at all
10F Window is ideally positioned(window is aligned with the front of the engine inlet)
11A/F Window is centered at your knees

You'll probably have to twist in the seat and hunch over to get a good look out the window at 7F.
