On a personal note, I would recommend Sushi Saito over the other recommended "top" sushi restaurants in Tokyo, mainly because of course the sushi is probably the finest I have ever had, but also because the chef is very friendly and a bit of a joker! Only 8 seats though. But at least he's moved form the car park stairwell he was in before...
