I presume by the way with a layover once you clear immigration at Shannon, on arrival you can just get out of the terminal and return without any restrictions.. I'll have no checked-in luggage.
Presume as you refer to clearing immigration at SNN, you must be on BA1 and have an early start the next day. Hotel wise, would agree the HIX is a good option, Hampton Inn is an ok alternative, have used it once, comfortable enough, good price and shuttle bus worked fine (though get out early in the morning, it's first come first served).

Yes, you arrive JFK as domestic pax and exit T7 through the departure lounge, bypassing immigration. You have to get the Airtrain to Federal Circle to catch the hotel shuttles.

You don't mention how well you know NYC, but if you've the energy and haven't seen it all before, could be worth going into Manhattan for dinner and even a spot of sightseeing/entertainment. Doesn't take that long to get in/out in the evenings.
