If you are sick you should not be traveling on any flight.
Your condition could get worse ... especially if you have a respiratory virus infection, that can worsen as a bacterial chest infection, and eventually as a lung infection: think pneumonia.

An if you have a cough, it will keep most pax on that plane awake, as your cough will get exacerbated at the dry & high atmospheric pressure.

Your doctor should give you a certificate that you are sick. Take that certificate to Delta CS on the phone and they will arrange to put you on a flight on the date that your doctor thinks you could be well enough to travel.

One does not want a flight to be diverted should something worse happens to you, especially in a pressurized cabin at 35k-39k feet in the sky.

I am willing to pay, but I do not know how to make that possible as the standard SkyMiles agent didn't think that I could do so with that fare type. There are open seats in Business Elite.
To answer your question: there is a no instrument to be able to get you a BE seat on that flight on the day you are scheduled to travel. If Delta is selling BE seats on that flight, you can either buy up (Yes, this is the term you must use with DL CS .... BUY UP to BE) to BE from your U fare less any change fees (a sympathetic agent may even waive those change fees if you BUY UP to BE, or cancel your U fare return (use it for a return sometime later in the year) and just purchase a new BE ticket.

Or if you have miles in another airline program either at Star Alliance or One World look at ways to obtain a 1 way award in Business Class.
