For premium economy I could only ever find booking class A when and how are the booking class W and S (which get 125% EMQ) available and open up?

Are W and S available on every flight? On the Air France website they only let you choose which class (Economy, Premium Economy, Business) and then choose flights within that category but no booking class W or S ever shows up.
