need help with Chinese New Year

Hi all,
Could really use your help and advice. I have been to Hong Kong several times but am planning to fulfill a bucket list item by seeing CNY this year. Will be traveling with my husband (who has been there once) and daughter (almost 4 years old, good traveler). We already have a reservation at the Intercontinental from where I hope we can see the parade on Thursday the 19th and we'll watch the fireworks from there on Friday the 20th. I had plan to tack on three more days before or after to go around and see a little more of the area. Any suggestions as to whether to go before or after? Will the crowds be unbearable? Our interests would be the standard tourist stuff (Victoria Peak, maybe the giant Buddha, etc.). Thanks!
