I empathise with the OP. I look back at my years with EK and have the same feelings described. EK was my first. I remember every minute of that long haul trip. It's honestly like having flown it this morning.
Change is expected though. Most of the folks running the show at EK have left since. Some who were involved in product enhancement between '07 and 11 were ex-LH/AF/GF/BA/VS tasked with making things better for EK.
Before then a complaint email about something as simple as a non-working entertainment box on the A330 was answered and properly addressed within few days.
With an open ended letter like that, I'd say aim low. Think of it as a message in a bottle thrown into the ocean.
