As an aside, I'd love to know who actually visits the CCR the most often. People like CWS, LTN, Mogres, etc all earn a lot of tier points, but that's not quite the same thing.
The way I read it was
Avios for 4 of them (perhaps with 2x241s)
UUA for the OP
So for example CW London to JFK
* 240k avios for 4 tickets, plus £2200 cash
* 20k avios for the UUA, plus £1000 WTP, but earning 180tp plus 20k avios back

That's quite a lot of guesswork to reach that conclusion. It would have been helpful if the OP's grievance we explained in the first first.
In the scenario you describe you would indeed need 2 Jokers, since you cannot split a jokered booking and ticket separate family members in different ways.
Plenty of ways around this - book the 5th passenger for avios within the jokered booking. Or buy a cheap ex-NCE fare. I don't see how in any way the OP was "forced" o use the 2nd Joker (assuming of course your guesswork is correct).
