These stories surprise me, don't the CC know what has been loaded onto the plane?

I would have thought that there would be some kind of paperwork showing what meals, drinks, duty free etc have been loaded and where they are to be located. It seems like from the comments here that the crew have to look in every nook and cranny to see what they actually have on board...very strange.
