ex-UK carrier charges are lower than ex-US carrier charges.
So LHR-NYC return is cheaper than LHR-NYC one way plus NYC-LHR one way as you've found.
If you book as an open jaw ex-UK you will be charged the ex-UK (lower) carrier charges.

If you're using a 241 there is no way to minimise the carrier charges. Starting from JER will eliminate APD.
