I remember when LGW-FAO was a GB franchise and there was one purser, Eduardo I think he was called, who would go around the cabin with a pen and paper taking everyone's order for dinner. A round of drinks followed, then the whole meal service was done by hand from the galley - not a trolley in sight. A separate starter, cheese plate, port, champagne from full size bottles - those were the days!
Port - and liqueurs, from a little basket IIRC.
The full size champagne bottles, on a CE service, were a very welcome sight.
I guess that's why they gave up the franchise....
