However, I just called AA, and they just removed the cancelled CX flight and everything went back to normal. After refreshing my screen, the new itinerary got displayed again, w/stopover in HK ^
What still worried me is that my other reservation (the same itinerary for my sister) are marked "on request" for some reason... I should have checked that before hanging up the phone.
If you're taking the next available flight, even if the connection exceeds 24 hours, it shouldn't count as a stopover, but this can require manual intervention.

OP should make sure that everything gets ticketed ASAP before problems arise again.
