What does a Blank Seat Chart Mean?

I have been monitoring a seat on DL1061 between LAX and MCO.

This has until recently shown most seats full in first class, (only 3 seats available) when looking at the seat map. Now when I look at the flight on Delta.com, that every seat is vacant.

When I go to the exact booking, it still shows us sitting in the three seats that I selected, but every other seat free.

How can a plane go from every seat full (except 3) in first to none, when 3 of us have paid tickets in first? Is the plane going to change to something bigger because of all the paid First?

On another topic - booked DL2600 from JFK to MCO. But now when I look at trying to book JFK to MCO (because expertflyer can't be used) - DL2600 doesn't exist. My PNR still shows DL2600 is around, but if I try and book a new ticket, only DL480 exist at the same time departure an arrival.

My PNR still shows DL2600 - when is DL480 going to show up in my PNR and how will I be notified? Arriving on SQ26, so a terminal 4 departure is a big plus for me now if this does happen.
