Ordering ahead also avoids any potential waiting period issues. As I noted up thread, all I had to do was insert the sim then reboot the iPhone and everything worked immediately.
It doesn't look like Gimpo is a location that can be ordered ahead of time (it was not in the list of collection places). I guess I will head on over to the GS25 at Gimpo upon arrival and try to activate my sim card on the spot.
