I've stayed over a hundred times at the Sheraton and it's a fine choice for the one night before you jet off to Miami. If money is no object, then book one of the suites at the end of the hallway facing the airport. These are quite large, with a big living room separated from the bed and bath area. The beds are very comfortable and large. And if you like looking at airfields, it's one of the best hotel rooms in the world.
I agree with others that you should ideally take a train into town for an early dinner (don't worry, the Dutch eat early. Like 6pm). Then you will have plenty of time to make it back to the hotel for a good night. And of course you can roll out of bed an hour before your flight which is sooooo much nicer than staying in the city. Do yourself a favor and "check out" the night before. Then you won't have to wait in any lines in the morning.
