Depends where XXX is. Some outstations have clearly adopted an end to end approach to this, and won't budge unless there is an overnight stop off in the middle. Other agents will just do as you wish. There is very little logic in the baggage system so it's about human procedures here, which is to through check to the end. So in essence you may get you want, or you may not. So either go hand luggage only, or accept a bit of kerfuffle getting your bag back in LHR, which may take an hour or so. Just report to the baggage desk in Arrivals. If you don't fly to AMS, nor will your bags. You make that even less likely if you do not check in for AMS and in particular if you don't pass into Flight Connections at LHR T5.
