EUR- PEK - HKG. 20 minutes over the limit IS an issue. You likely won't be allowed to board in EUR. As moondog says, change your PEK-HKG segment to an earlier departure. 72 hours means just that. Not 72 hours and 1 minute.
SIN-PEK-EUR. If no other stops inside mainland China, that's good for up to 72 hours in Beijing also, visa-free. Note that our comments assume that you have an EU passport (or one of the others allowed extended 72 hours and not the standard 24).
