You can purchase an exit row seat from QF for $180pp (AUD) per long haul sector. That may work out more better for you.
Alternatively there are a couple of extra leg-room seats available for AUD25 per person, including row 71D and 80A and 80K.
Is PE worth it? It is similar to a US domestic first class in terms of seating and food (assuming a transcontinental meal service). As the seat recline is generous (9'), there can be an issue when the person in front reclines (hard to get out of your seats if you need).
At 6'3 you'll probably find the legrest fairly useless. i tend to think PE is overpriced unless you can get it heavily discounted on sale.
Not sure how the flight timings would work out - but if you want an upgraded service, maybe consider something like AA first class to HNL connecting to Jetstar star class HNL-Au. Star class is pretty much similar to Qantas PE (with the advantage that you are top of the pecking order on Jetstar being in the highest cabin).
