I will be taking an Ex EU flight to HKG in CW (J), I want to upgrade the LHR-HKG leg to First (subject to availability). Thanks in advance
You can UuA per segment so you can UuA your LHR-HKG segment from CW to F (subject to availability of course) and all other sectors will remain untouched. Cost would be whatever avios are due (30k?) and there is no additional APD or carrier surcharge going from CW to F.

I have done UuAs of a BA longhaul segment in an exEU before although mine have been to US rather than HKG.
