To make it easier, and if its ex-AMS, book the return as xxx-LHR LGW-AMS.
Just be aware that certain North American outstations are under instructions not to short check luggage on same day connections. You are most unlikely to be able to do this ex-YVR for instance.
Next day connection or different London airport will work, but simply saying "please don't through check it to my final destination" is going to fail from many US and Canada airports.
