There is high end dining and shopping on both sides, although the Euro-style dining options are better on the island, in the FS or MO, etc. Yet the Intercontinental, across the corner from the Pen is probably the best hotel in the city when it comes to dining. Most of the best Cantonese is in Kowloon, but of course there are some great places on the island.
If you don't mind a little hotel hopping, why not try both properties? And maybe add the MO to the mix. If you are into iconic and historic properties, you should at least stop by the MO for lunch or dinner.
I forgot one thing, if you book through CTS, you get a free Rolls Royce transfer to and from the airport if you choose the Pen.
