Yes you can book open jaw as long as the jaw is shorter than the two segments.
In this case, HKG-SIN is much shorter than MAN-LHR-HKG and SIN-LHR-MAN.
Yes you should be able to add SIN-SYD after booking LHR-SIN, although I wouldn't count on availability..
