It's my belief the QF search matches AA access/availability better.

From a search on QF, I see CX F class seats available in January as follows:

Jan 21 CX 805 12:15am - 6:05am

Jan 25 CX 805 12:15am - 6:05am

It's worth noting on the same days I see AA F to Shanghai connecting to CX business to HK.

I quickly checked the EWR non-stop to HKG too. Unfortunately I don't see any CX F seats the month of January 2015. However, if you happen to have QF miles to burn, then Emirates has multiple dates in F from EWR - DXB - HKG.
