Man, I love yatai.
My cousin used to own a cart in Fukuoka.
First, pointing at what you want at a yatai is what everybody does, especially after one has had a few drinks and verbal communication skills diminish.
Secondly, as much as I am a lover of yatai, sushi of a cart may may not be a good thing.....
If you are going for sushi, most "English" terms in sushi is actually Japanese. A combination of pointing and speaking the "English" terms in sushi should let you get by.
Fukuoka is pretty cosmopolitan. When I hung with my cousin, with my bad Japanese, it was really not an issue.
And my cousin's ramen cart was awesome.
