What to say to people when ordering?

For some place I know we could do with poking and pointing at photos in larger cities.
Now I have 2-3 places that I am going which is a bit off the beaten track.
If I was going to a local sushi inn and there is not much kanji and photos. Everything written in good ole hiragana , what is the best thing to say to the chef?
Is it too disrespectful to the chef when you request a omakase? Can I say. omakase 6000/7000 yen? I really want to try local joints this time.
I am traveling to Fukuoka purely wanting dine at Yatai on the street, seems like finger pointing would be more then enough, maybe a little bit of google translate of single words..
