Yeah, that's an old saw but not entirely accurate. At any rate, it's mainly a "test" for loose stones, and most Chinese jewelry stores are dealing with set products not loose stones. Even if they wanted to do this test for loose stones, they wouldn't put a goblet for testing in every cabinet--it would be limited to a testing station with a single dedicated water receptacle. Nice try, though.
