I've probably snapped 500 pictures for strangers at random tourist spots (in addition to restaurants, bars, cafes) during the course of my life, and have never once been scammed in any way during the process. I'm pretty sure that most others have similar track records.
Agree for the most part and it's just nice to be, mm, nice.
However, it really depends where I am. Pickpocket scams are so rife e.g. in Paris now that I am ultra-wary. In China, I'm pretty sure that it's legit (all my experiences), or at worst case scenario, a lead-in to the tea house or other similar scam.
