Since I think most of those breakfast buffet should really be around $20, I tip about $3 per person. Usually there are 3 of us, so I would tip $10 just to be even.

As for the omelette bar, if I have $1 bills I would tip, but most likely I won't. I put away all the $1 at the first day so I could do the room tip. I would put in a $5 or $10 for the omelette bar after a few days or week if I see the same person there every morning.
