Just because you have high limits on other cards does not necessarily mean Amex will approve you for a similarly high limit... especially if your available credit far exceeds your income. Also note your Amex Platinum card still has a limit... they just don't tell you what it is. You only find out when you try to make a purchase and you exceed what they're willing to let you charge, and your card is declined.
Amex generally requires a 4506-T if you request an increase that would put you over $24,500 for any single card or over $34,500 across all your credit lines.

Amex Business cards did an audit of my income a year or 2 ago, so they have my income tax returns on file, with income well in excess of all my credit lines combined, much less the 10-15% of them I actually have in use at any one time.
I've never had any trouble using my Platinum card, even when I did a $50,000 purchase which was way above my normal activity.
I think Amex actually did not base their credit limit on anything specific to me, I think they were just handing out $5k limits that day. :-(
Remember, this is a card sold for the bonuses from charging $60k per year, which in a normal payment cycle is not possible with a $5k limit, implying they expect to give out larger than $5k limits to start for most people.
