LHR is another option but you will be paying APD fee if you transit more than 24 hours.
But you can't on a one-way award, so that's irrelevant, no?

This said, with Aeroplan, I would not hold my breath that new reward space might appear. Even on domestic legs. I suspect that would be un infrequent occurrence.
Actually YVR-LHR-BRU is a much better itinerary. The one negative side is that if I get this right, YVR-BRU is on one of these slave ships with the supposedly inferior J seats instead of regular pods.
Still, a long night sleep is significantly better than the too short sleep on YUL-BRU.
YVR-LHR is the AC staggered business.

And you would most likely have to pay the $30 phone booking fee again if you made it as a new booking (and 25/50K additional points). That is if the award availability opens up. YVR-YYZ/YUL are popular routes year round so AC only makes only some of the flights (each day) have award seats.
You may also want to look into a revenue booking for your domestic leg, depending on when you're looking to travel.
I personally think it's just better to book YUL-BRU and then just pay $90 change fee to add in YVR-YUL, if that's what you want, rather than spending 25/50k additional to book it as a separate ticket.
But if YVR-LHR-BRU is available for two you should go ahead and just book that and not worry about changes and award space opening up.
