Excellent service gets a "Thank you for all your lovely hospitality, have a good day and goodbye."
And below poor service means I offer no eye contact and don't utter a word.
It makes me feel better, if nothing else.

I always find myself doing it, it always feels funny, but it is somehow better than just walking off and saying nothing.
I do the same nearly always thank you (just 'goodbye' was reserved for a very poor Lufthansa flight). "Thanks for a brilliant flight" or something along those lines for an excellent crew.
